Ask anyone I work with and they will tell you I basically eat the same breakfast at work every day. It’s my chia seed breakfast pudding in a Tupperware. This sunshine bowl ups the ante a bit with added fruit, but it’s still a super easy breakfast to make and it contains 12g of protein with a whole lot of fiber and other goodness. It is definitely a hardy breakfast option that will keep you full until lunch. During a work week, I typically make 3 servings of this pudding the night before my first set of shifts. When I wake up in the morning, I make a pitstop at the fridge and then walk out the door. Enjoy this one!
What You Need
Serves 1
- 2 tbsp Chia Seeds
- 1 tbsp Hemp Hearts
- 1/2 cup of plant milk
- 1/2 Banana diced
- Dribble of Vanilla (~1 tsp)
- Dribble of Maple Syrup
- spoonful of any nut butter of your choice
- Optional add-on’s: Chopped nuts, Pepitas, Crasins, Granola, Fresh Fruit
Directions
- Add all ingredients into a Tupperware or bowl and stir until combined. If you prefer your bananas not to brown, you can add them in right before you eat it. If you are waking up in the morning and decide to make this, you can do so, but it will have to sit on the counter for at least 40 minutes until the chia seeds to turn “pudding like” and develop it’s gelatinous texture.
